Summer Grilling Recipes from The Connoisseur
Each month Preston posts a new recipe to his Acme Markets Cookbook Page. Below are his favorite suggestions for grilling this weekend:
Grilled Beer Brats
- Package of Bratwurst
- Two bottles of your favorite Lager
- One onion sliced
- 1/4 stick of butter
- Large hot dog buns (Important! good quality bread!)
- Spicy Mustard
Add the sliced onion, butter, beer and bratwurst to a pot. Eyeball the amount of beer. You want the liquid to flaver the bratwurst so if you need more just add some. Set on medium high heat and bring to a boil. Let mixture boil for about ten minutes and remove from heat. (This can be done earlier in the day if you are entertaining). Strain the onions from the beer and set aside. Bring your grill (or pan) to medium heat. The brats should already be cooked through so you don’t need to leave them on too long. You just want to get a little bit of a sear on the brats. It improves the flavor and texture. Serve with the buns, onions and mustard. Add a side of potato salad or cole slaw and you are good to go!
Bacon Blue Cheese Buffalo Burger
- 1 lb ground Beef
- Shredded Iceberg Lettuce
- 1 Large Tomato
- 4 Brioche Buns
- 12 Strips of Bacon
- Blue Cheese Crumbles
- Buffalo Sauce to taste
- Salt & Pepper to taste
Cook the bacon strips nice and crispy and set aside on paper towels to drain. When cooled crumble or dice into bits. Form four pattys with the ground beef and salt and pepper both sides. Grill burgers to personal preference of ‘doneness.’ Place shredded lettuce and tomato slice on bottom bun. Top with burger patty, diced bacon, blue cheese crumbles and buffalo sauce. Add top bun and eat away!
Potato and Onion Foil Packets
- 4 potatoes, sliced (red or white)
- 1 red onion, sliced (red or white)
- 1 teaspoon salt (approx.)
- 1 teaspoon ground black pepper (approx.)
- 4 tablespoons butter (approx.)
- Ingredients based on 4 servings…increase based on serving size
Grill at medium heat. Use a couple of pieces of Aluminum foil to keep it together. Put a few potato slices and onion slices on foil. Option: Can dice it as a hash, slice it, or cut in chunks. Sprinkle with salt & pepper to taste, and top with 1 tbsp of butter. Wrap into a flattened square with edges sealed. Cook for approx.. 30 min. Turn at 15 min mark.
