Meatloaf, smeatloaf, double-beatloaf. I hate meatloaf.

To much of our surprise, there are multiple members of The Preston & Steve Show who hate meatloaf. They have valid reasons for not liking the massive meaty delicacy, most of which stemmed from childhood trauma. But Nick proposed another reason: It’s because they had not tasted his mom’s famous meatloaf.

A quick text to Betsy McIlwain and *boom* we have meatloaf delivered a few days later.

We have to say, this isn’t your mom’s meatloaf. Betsy spices hers up with ingredients like salsa and fresh parsley. And her secret to the perfect texture is uncooked oatmeal.

Message From The Chef: I do not really measure ingredients, but I can walk you through how I make my meatloaf.  All measurements are approximate.


  • Betsy's Meatloaf Ingredients:

    1 & ½ pounds of meatloaf mix. Supermarkets carry this.  It is a combination of beef, veal, and pork.  Using just ground beef won’t cut it.

    For the meatloaf:

    • 1 egg
    • Two or three sprigs of parsley, stems removed
    • About 1/3 cup of Worcestershire, or to taste
    • About 1/3 cup of ketchup
    • One stalk of celery, washed and trimmed and chopped. Use a few of the leaves, washed, as well
    • About 1/3 cup of salsa.  I use “medium”
    • I small onion, peeled and chopped
    • About 1 cup of uncooked oatmeal

    For the glaze:

    • Mix 1/3 cup of ketchup
    • 1/3 cup of brown sugar
  • Meatloaf Recipe:

    1. Preheat oven to 350
    2. Spray a loaf pan with baking spray
    3. Put meat in a large mixing bowl and add Worcestershire sauce and ketchup
    4. Put egg, chopped celery, parsley, celery leaves, salsa, chopped onion in a blender and blend on high speed until ingredients are liquified.
    5. Pour this mixture into the meat and add uncooked oatmeal. Mix together with your hands, adding enough uncooked oatmeal until the meat mixture holds together. This is messy, but so what?  You don’t want too little oatmeal or the mixture won’t hold.  Too much will dry it out.
  • For the Glaze:

    1. Mix 1/3 cup of ketchup and 1/3 cup of brown sugar.  Make sure it is well blended.
    2. Pour some of it on the bottom of the loaf pan.
    3. Add meat to loaf pan. Pat smooth.
    4. Place the slice of bacon, cut in half width wise, on top of meatloaf and then pour the rest of the ketchup and brown sugar mixture over top of meatloaf.
    5. Bake for an hour.
